Recipe: Mini Apple Cobbler Bites

These delicious mini apple cobbler bites provide all the delicious flavors of warm apple cobbler but in an easy two-bite option. Pair with yogurt or hard-boiled egg and these are a quick grab-and-go breakfast option or make a perfect sweet treat for an event.
Ingredients
Apple Topping
2 cups diced apples (about 2 medium)
1 tablespoon orange juice
1/2 teaspoon orange zest (optional)
1-1/2 teaspoon apple pie spice (or a blend of cinnamon and nutmeg)
1/2 teaspoon salt
Oat Crumble
1-1/2 cups rolled oats
1/2 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup unsalted butter, softened
Directions
- Preheat the oven to 350◦F. Line mini muffin tin with mini paper cups. Spray paper cups with non-stick cooking spray. Optional: Spray mini muffin tin directly with non-stick cooking spray.
- Wash hands. Rinse apple with clean cold water and dice. Add the diced apple, orange juice, orange zest, cinnamon, nutmeg, and salt to a bowl. Toss to coat and set aside.
- In a separate large bowl, add rolled oats, flour, brown sugar, cinnamon, and salt. Add in 1/2 cup softened butter and use a fork (or your hands) to cut the butter into the dry ingredients. Keep mixing until it is all coated and forms little crumbles.
- Add 1 tablespoons of the crumble mixture to each muffin cup. Use your fingers and the back of a tablespoon to press the crumble firmly into the bottom of the muffin cup. Place muffin tin into the oven and bake for 5 minutes.
- Remove muffin tin from the oven and let the crust cool for 10 minutes.
- Scoop 1 tablespoons of diced apples onto baked crumble crust. Sprinkle any remaining crumble over the top of the apples.
- Place the muffin tin back into the oven and bake for 10-12 minutes, or until apples are soft.
- Remove the muffin tin from the oven and let rest for 10-15 minutes.
- Serve warm or enjoy at room temperature.
- Store in an airtight container.
